Date and Nut Truffles – Festive Nibbles
This is a really simple recipe that is nutrient dense, seriously delicious and a bit festive.
100g unsalted cashews
4 tablespoons date puree
First make the date puree by adding the same amount of water to dates (I use 200g of each and use any left over to sweeten other dishes). Warm the mix slowly on a hob whilst mushing the dates until they have nearly disintegrated. Finish by blending to a smooth puree.
Whizz up the cashews in a blender or coffee grinder and mix with 4 tablespoons of date puree. Roll the mixture into balls and allow to set in the fridge. Once they are a little harder, roll in the coconut.
